Fast and easy dinners for busy days

​Sometimes you look at the clock, and you realize that no one has thought about dinner, now everyone is hungry and there is only time for something simple and fast. Read on for inspiration with these ideas that may be ready in 1-2-3.

1. Quesadillas. This option is perfect when you have leftover food from previous days. Imagine some rice, beans, or chicken, mixed with a little sauce, cheese and heated inside a tortilla. With a side of sour cream, guacamole or salsa.

2. Salad. Maybe you have enough herbs in your garden to make a salad, or you have to use what you have in the fridge before it expires, a salad is a good and healthy option. Have some creativity, add olives, peppers, hard boiled eggs, fruit, nuts or maybe create your own dressing.

3. Bruschetta. Sometimes when it’s past dinner time, it’s best to make a small appetizer, one of my favorite options is a bruschetta, a toast lightly brushed in olive oil with fresh tomatoes, little balsamic glaze, salt, pepper, and some chives or basil. The freshness of the tomatoes and the warm bread make the bruschetta the star of the night every time it is presented.

4. Pasta. Boil salted water, then add the pasta for about 7 minutes. While in a skillet, sauté a few small tomatoes with salt and olive oil and garlic.  When the pasta is to your liking, add the tomatoes, chopped fresh basil (basil) chiffonade style, salt, pepper and Parmesan cheese, for a simple and delicious dish.

5. Frittata. ​I am a fan of having breakfast at dinner time. Sometimes the easiest and most accessible is a frittata (egg tortilla). As a base you can use potatoes or vegetables, sauté it with onion and garlic and then when it is almost cooked add beaten eggs. Cover it to finish cooking, and  add some cheese when it is nearly done. Serve it with toast or crackers.

6. Rice. Such a simple and versatile ingredient, you can prepare some white rice, which is made quite quickly and accompany it with your preferred protein. If you have white rice from the day before, you can fry an egg, add vegetables and soy sauce for a home version of Chinese rice.

7. Sandwiches. The sandwich is a faithful friend, you can make so many combinations, using different proteins, vegetables and seasonings, everyone can make their own to their preference for greater satisfaction.

Hope this list has inspired you to make a quick dinner. Many times cooking something at home can be faster and cheaper than ordering out. Use the ingredients you have as inspiration to create new combinations.
