Slowly but surely, dates are becoming a staple item in many kitchens. It is a sweet treat, used in so many classic and new recipes. This goodness however doesn't come without a price,
this fruit is high in calories. Dates comes from the date palm tree (can palms get any more cooler?) I grew up surrounded by coconut palm trees, and now I wish we had some date palm trees too.

Below an extremely simple recipe that will provide you a healthy and delicious snack in minutes.

Dates energy snack
 
  • 10 dates
  • 2 cups of pecans
  • pinch of salt
  • 1/4 cup of shredded coconut flakes
Process:
  • Pit the dates and soak them in warm water for about 10 minutes to soften.
  • In a food processor, mix the dates, the pecans and the salt together until a dough is created.
  • Scoop the mix one spoon at a time and create a ball with your hands, roll the ball in the shredded coconut. Keep in the fridge for up to a week, if it lasts that long. Enjoy!
