Homemade Bread. Easy recipe and you have bread made the same day... without a machine!

Bread, bread and more bread, if there is something I love to eat it is bread, and now I love to make it too. This recipe is basic and without much technique, to always keep handy when you need bread made the same day.

Here is a basic bread recipe that is simple, and it makes two loaves. The ingredients are:

INGREDIENTS:
  • 4 cups of flour (542 g) and another half cup to add, if needed to the mixture (depending on the temperature of your kitchen) and to be able to knead the bread. I recommend the King Arthur Bread Flour if you are interested, they also offer an organic option.
  • 2 tablespoons of yeast. I use Saf Instant
  • 1 tablespoon of sugar
  • 2 1/2 tablespoons of salt
  • 1 2/3 cup of warm water (379g) (90 degrees - 100 degrees F) Important that it is warm, not hot, or cold.

PROCEDURE:

STEP 1:
  • Mix all the ingredients with a spoon in a deep container.
  • Sprinkle some flour on your hands and on the clean counter of your kitchen. Place the dough on top of the flour on the counter.

STEP 2:
  • Knead the mixture for about 6 minutes. During those six minutes, if your dough needs a little more flour or warm water, this is the time to add. Work the dough and form it into a ball.

STEP 3:
  • Place the dough, now in the form of a ball, in a slightly greased container.  Cover it with a clean kitchen towel and leave it at room temperature for about two hours to let it raise.

STEP 4:
  • Separate the dough into two parts (the recipe is for two loaves)
  • Take the first part and shape the dough into the form you want (you can fold it twice and stretch it) this should not take more than about 30 seconds. Repeat with the second part.

  • Place the breads in the molds, I like to make the baguette style and the molds of Onyx Haus which is one of my favorites. Cover the breads for about 40 minutes for them to continue to raise. 
STEP 5:
  • Pre-heat the oven to 450 F.
STEP 6:
  • After 40 minutes, the bread should have grown a little again.
  • Place some bread flour on top of the dough and score it with a knife to have a better bake.
STEP 7:
  • Place the mold with the dough in the pre-heated oven, mid-rack. Bake for 20-25 minutes, at the end you can leave the oven door slightly open to finish baking (5 minutes). The internal temperature of the bread must reach 190 F.

When you take it out of the oven, resist the temptation to try it, wait until it cools a bit, let the bread do its whole process before you enjoy it.
