Cheesecake. Easy recipe with fewer ingredients.

Now that we spend more time at home, I feel motivated to turn on the oven more often, and sometimes I just want to make a small portion. This recipe takes less than half the usual ingredients (speaking of quantity) of an original cheesecake.

INGREDIENTS

Crust (Optional):
  • 1 cup of crushed graham cracker
  • 4 tablespoons of melted butter
  • 2 tablespoons sugar
  • Mix and press into the bottom of a small greased pan

Filling:
  • One pack of cream cheese. Follow the instructions on the package to soften it a little.
  • 1/2 cup of granulated sugar, can be substituted with your favorite sugar.
  • 1 tablespoon of lemon juice
  • 1/2 tablespoon of vanilla extract
  • a pinch of salt
  • 2 eggs

PROCEDURE

  • Pre-heat the oven to 325 F.
  • Mix cream cheese and sugar. You can use a mixer or whatever you have available to help give a creamy consistency to the mixture.
  • Add lemon, vanilla, salt, eggs, and continue to  mix until a smooth consistency is achieved.
  • Pour the mixture into the mold with crust, or into a small greased mold if you don’t want crust.
  • Bake at 325 degrees F for 35 minutes, or until you pass the clean toothpick test. Leave outside the oven to cool. Cover it and put it in the fridge. It tastes much better the next day, but I understand if you want to try it after an hour in the refrigerator.

Accompany it with fruits. Take advantage of the fruit season to complement the dessert, the color scheme will look amazing.

Occasionally we make the whipped cream, but this time I had Aldi’s Farmers Whipped Cream. Aldi is one of my favorite supermarkets because of its organic choices, ingredients, and prices.
Few things taste better than a cheesecake, with fruit and whipped cream. This creamy explosion, tastes better after dinner, as part of a charcuterie board or as a kitchen toll (eating a piece every time you pass, shh!). Did you enjoy this recipe?
